Fresh ingredients for sausage and egg breakfast casserole

How to Make It

  1. Preheat oven to 350 degrees.

  2. Next dice up peppers, onion, and chop your spinach. Set aside.

  3. In a medium bowl, crack 12 eggs and whisk well. If desired, add a few drops of hot sauce and whisk until combined.

  4. In a large skillet over medium-high heat, add a little olive oil to coat and cook turkey sausage until fully cooked. Drain meat and set aside.

  5. In the same skillet cook diced peppers and onions on medium heat until slightly softened (about 2 minutes). Add in chopped spinach and cook for 1 more minute. Remove from heat.

  6. Add the turkey sausage back to the pan and add in all your seasonings. Stir until well combined.

  7. Pour combined sausage and veggie ingredients into a glass 9×13 baking dish that has been sprayed with non-stick olive oil.

  8. Top with the egg mixture and an even sprinkling of onion and herb seasoning.

  9. Bake for 25-30 minutes or until a knife comes out of the center clean.

  10. Let cool for 5-10 minutes before slicing and serving. If desired, top with salsa and enjoy your delicious whole30 breakfast casserole!

How to Serve It

  • Top each serving with salsa for a fresh, flavorful finish.
  • Add sliced avocado or fresh herbs for extra color and richness.
  • Serve with fresh fruit, roasted potatoes, or a simple green salad for a complete breakfast or brunch.

How to Store It

Allow leftover casserole to cool, then store it in an airtight container in the refrigerator. Enjoy refrigerated leftovers within several days.

For longer storage, cut the casserole into individual portions and place them in freezer-safe containers or wraps. Freeze until solid.

To reheat, warm individual portions in the microwave until heated through, or place the casserole in an oven-safe dish and heat gently in the oven. Avoid overheating, which can make the eggs dry or rubbery.

Helpful Tips

  • Drain the cooked sausage before adding it to the casserole to help prevent excess grease.
  • If using frozen spinach, thaw and drain it thoroughly so extra moisture does not make the casserole watery.
  • Let the casserole rest for 5-10 minutes after baking so it can set and slice neatly.
  • Check the center with a knife before removing it from the oven; it should come out clean.

Optional Variations

  • Use turkey sausage if you are not following Whole30, or choose another Whole30 approved breakfast sausage.
  • Add extra vegetables, such as diced mushrooms or zucchini, if desired.
  • Adjust the heat with additional hot sauce, or use a spicy sausage for a bolder flavor.

Frequently Asked Questions

Can I make this casserole ahead of time?

Yes. Assemble the casserole ahead of time, cover it, and refrigerate it until you are ready to bake. Add a little extra baking time if it goes into the oven cold.

Can I use frozen spinach instead of fresh spinach?

Yes. Use 16 ounces frozen spinach, thawed and drained. Removing as much liquid as possible helps maintain the casserole’s texture.

How do I know when the casserole is done?

The casserole is ready when a knife inserted into the center comes out clean. Bake for 25-30 minutes as directed.

Is this casserole Whole30 compliant?

Use Whole30 approved breakfast sausage and check all packaged ingredients, including sausage and seasonings, to ensure they meet Whole30 requirements. If not following Whole30, turkey sausage may be used.

Can I serve this casserole with salsa?

Yes. Salsa makes a flavorful topping, as long as the salsa fits your dietary preferences and Whole30 requirements when applicable.
