  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken or vegetable broth Use vegetable broth for a vegetarian option.
  • 1 small onion, diced

Dairy Ingredients

  • 2 cups sharp cheddar cheese, grated Use good quality cheese for best flavor.
  • 1 cup milk Substitute half and half for creamier texture.
  • 1 cup heavy cream

Seasoning

  • optional chopped chives for garnish Add for color and flavor.

Preparation

  • In a large pot, melt the butter over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in the flour to create a roux, cooking for about 2-3 minutes.

Cooking

  • Gradually whisk in the broth, ensuring there are no lumps.
  • Bring to a simmer and cook for about 10 minutes until thickened.
  • Reduce heat and add the milk and heavy cream, stirring well.
  • Gradually add in the grated cheddar cheese, stirring until melted and combined.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with chopped chives if desired.

Notes

Let soup cool completely before storing. Refrigerate for up to 3-4 days or freeze for up to 3 months. Reheat gently and add extra milk if needed.
