Ingredients

For the Chicken

  • 4 pieces chicken thighs or breasts, pounded to make evenly thin

For the Breadcrumb Coating

  • 1/4 cup grated parmesan cheese
  • 1 cup breadcrumbs, I use panko
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil

For Topping

  • 4 slices mozzarella cheese

Instructions

Preparation

  • Preheat the oven to 425 degrees.
  • In a small bowl, combine breadcrumbs, grated parmesan, paprika, salt, pepper, garlic powder, and basil. Stir until the seasonings are evenly distributed throughout the breadcrumbs.
  • Press each chicken thigh or breast into the breadcrumb mixture on each side, making sure both sides are covered with the seasoned coating.
  • Line a baking sheet with parchment paper. Lay each piece of chicken onto the sheet in a single layer.

Cooking

  • Bake for 15 minutes, then flip the chicken over and cook for another 10 minutes. The juices should run clear and the internal temperature should reach about 170 degrees.
  • Place a slice of mozzarella cheese on top of each piece of chicken and return to the oven until the cheese is melted, about 2-3 minutes.

Serving

  • Serve the chicken parmesan over a bed of spaghetti topped with marinara sauce.

Notes

For best quality, enjoy refrigerated leftovers within a few days. To freeze, place cooled chicken in a freezer-safe container. Reheat refrigerated chicken in the oven for best texture.
