  • 4 cups chicken broth

Vegetables & Spices

  • 4 pieces jalapenos, chopped Adjust spiciness by using fewer or deseeding them
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Cooking Oil

  • 2 tablespoons olive oil For sautéing vegetables

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped jalapenos, onion, and garlic, and sauté until the vegetables are tender.
  • Stir in the corn and cooked chicken.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat and add the cream cheese, stirring until melted and smooth.
  • Season with cumin, chili powder, salt, and pepper.
  • Simmer for 10 minutes.

Serving

  • Serve hot, topped with shredded cheddar cheese.
  • Accompany with bread or tortilla chips for a complete meal.
  • Add a dollop of sour cream on top for extra creaminess and flavor.

Notes

To store the soup, let it cool completely first. Then, transfer it to an airtight container and refrigerate for up to 3-4 days. For longer storage, consider freezing it.
