Ingredients

Main Ingredients

  • 1 lb Chicken Breast (Can substitute with thighs for more flavor.)
  • 8 oz Noodles (Use your favorite type, adjusting cooking time accordingly.)
  • 1 cup Vegetables (Carrot, Bell Pepper, Broccoli) (Swap with any quick-cooking vegetables.)

For the Sauce

  • 1/4 cup Soy Sauce (Use tamari or coconut aminos for a gluten-free option.)
  • 2 tbsp Honey (Can substitute with maple syrup.)
  • 2 tbsp Rice Vinegar (White vinegar can be substituted if needed.)
  • 2 tbsp Sesame Oil (Opt for a neutral oil for a milder taste.)
  • 4 cloves Minced Garlic (Feel free to use more for a stronger garlic taste.)
  • 1 tbsp Cornstarch (Key for thickening the sauce.)

For Cooking

  • 2 tbsp Neutral Oil (Choose vegetable or canola oil for best results.)

Instructions

Preparation

  • Thinly slice the chicken breast into bite-sized pieces and mince the garlic. Chop the vegetables into uniform pieces and cook the noodles as per package instructions.
  • Combine the sliced chicken, soy sauce, honey, and minced garlic in a bowl and let it marinate for 15-30 minutes.

Cooking

  • Whisk together soy sauce, remaining honey, rice vinegar, sesame oil, minced garlic, cornstarch, and a little water until smooth.
  • Heat a large wok over medium-high heat and add a tablespoon of neutral oil. Sear the marinated chicken for about 4-5 minutes until golden brown.
  • In the same wok, add more oil if necessary, then stir-fry the carrots and broccoli for about 3-4 minutes. Add bell peppers and sauté for another 2 minutes.
  • Return the cooked chicken to the wok along with the prepared noodles. Pour the sauce around the edges and toss everything together for 2-3 minutes until the sauce thickens.
  • Taste and adjust seasoning if needed. Serve warm, garnished with sesame seeds and chopped scallions.

Notes

Garnish each serving with sesame seeds and chopped scallions for extra texture and fresh flavor. Store leftover noodles in an airtight container in the refrigerator for the best quality within a few days.
